Two ways:
1. Emotionally and mentally. She starts asking difficult questions. She asks him how is stays so uninvolved with the cases they deal with, if he cares about anyone at all, and she calls him Teflon Man.
He, naturally, becomes defensive, and while he does tell her that he cares about people, at one point he actually says "What have I ever done to you?" in great distress, as if she has hit a very sensitive nerve.
2. Literally. Nick is leaned back in a chair trying to sleep, and she comes over to him and kisses him on the cheek.

Ok, I wasn't sure if you were familiar with the word/brand name Teflon. It's a type of coating that they put on various surfaces to keep things from sticking. One use is on kitchen pots and pans so you don't have to use oil to keep foods from sticking to the pan.
Therefore, when Lulu calls Nick Teflon Man, she is saying that nothing "sticks" to him, i.e., nothing bothers him because he is too detached from the rest of the world for it to affect him.
